It is used to remove grease, combustion products, smoke, odors, heat, and steam from the air by a combination of filtration and evacuation of the air.
It consists of three main components: a skirt to contain the rising gases, filters to filter out grease, and a fan for forced ventilation. The gases are preferably vented out of the house via a flue or exhaust pipe, although they are sometimes let back into the room after passing through filters.
An exhaust hood is used to vent excess moisture from the kitchen, as well as objectionable food odors, smoke from burned foods, and combustion products from gas stoves. Exhaust hoods often include lighting to illuminate the stovetop.
The invention of various forms of extractor hood in mid 20th century allowed for the reintroduction of the Farmhouse kitchen into popular architecture.
First extraction hood was produced by Faber in 1963.
